The most simple pleasure…. homemade food. Good vibes and hearty taste.

I haven’t used my sourdough for a long time but I kept on refreshing it and today it gave great results with this tasty olives focaccia.

Spelt flour is my good choice, once again.

And as we couldn’t decide between cherry tomatoes 🍅🍅🍅 and olives 🫒🫒🫒…… that’s the result! 🤣

Here is the total formula:

80% strong flour
20% whole grain spelt flour
80% 💦💦
25% sourdough starter
2,5% salt
3,5 extra virgin oil

Last weekend lighted up with this hand kneaded 💪🏻💪🏻 sourdough brioche 🥐 with raisins filling.

Because no Sunday breakfast in the world is more satisfying than having in one hand a strong espresso, and in the other a fresh baked homemade sourdough brioche. ☕️🥐

Same ingredients you found in my last brioche post:

500 gr strong white flour
200 gr milk
100 gr sourdough starter
1 egg
1 egg yolk
70 gr sugar
50 gr room temperature butter
1 coffee spoon of salt
Organic lemon zest

Eggwash + a coffee spoon of water to brush before baking.

But this time I choose to fill them with raisins…. And it was a good choice 😋😋😋😋🤤

Bake in preheated fan oven at 180 degrees, for about 20 minutes till golden brown.

A mid-August night’s dream….. a gorgeous sourdough “pizza in teglia”.

A dough matured for 24 hours, made more soft and gentle by a 15% Khorasan flour.

The white strong flour I used (W400) gave the dough its structure and the kamut flour I added gave a nutty hint and, above all, a lighter and less dense texture.

Here is the dough formula:

85% strong white pizza flour (W400)
15% khorasan flour
20% sourdough starter
75% 💦💦
2,5% salt

Usual proceeding I use for pizza (depending on the temperature and the season times can change):
- mixing the dough let it rest half an hour,
- three sets of stretch and fold with a 30 min interval, for about 1 hour and a half.
- let it rest for about 2 hours
- put it in the refrigerator for at least 12 hours, up to 48 hours
- out of the refrigerator let it rest for half an hour
- place the dough in your pizza pan, previously oiled, gently pressing it to fit the pan
- let it rest for about 3 hours…. Watch the bubbles! 🧐😍

Spread tomato sauce 🍅 and pre-cook in a preheated oven 🔥🔥🔥 at 250 degrees for 12 minutes in the lower part of the oven.

Garnish with mozzarella and whatever you like and cook 5 minutes more in the middle part of the oven.

Boom!!☄️😋😋😋🍕🍕

Today’s sourdough focaccia has 50% whole grain spelt flour and it’s yummy!!😋

The other 50% is stone grounded bread flour.

It’s soft and tender and you’ll appreciate the mild, slightly sweet and nutty flavor of spelt flour.
Once again I choose green olives to garnish 🫒😉

Here is the total formula:

50% bread flour (mine has W250 and 12% proteins)
50% whole grain spelt flour
80% 💦💦
25% sourdough starter
2,5% salt

With 29 degrees in my kitchen it was easy to mix it late in the morning and to eat it for the afternoon snack.
My daughter loved it 👧🏻💜

Fifty-fifty whole wheat sourdough bread, 80% hydration.

I used 50% of a high quality stoneground whole wheat flour and 50% strong white flour.

I left it in the refrigerator for 18 hours and the taste was really satisfying, this kind of flour mixture offers a very complex flavor.

Hand kneaded and baked on a baking stone.

My Sunday bread 🥖☺️

When you have 29 degrees in your kitchen you can afford mixing a dough in the morning and baking it before dinner.

This was the case.

I mixed the dough for these sourdough panzerotti late in the morning, when my sourdough starter was ready, and we could taste them with our happy hour, before dinner.

The dough, hand kneaded, was wonderfully fluffy.
Here is the formula:

70% bread flour
30% strong flour or Manitoba
20% sourdough starter
60% water
6% extra virgin oil
2.5% salt
A hint of honey

I baked it on my baking stone at 250 degrees, for about 13 minutes.

Once you find your formula you can enjoy many different options for your sourdough focaccia.

This one has 30% stone grounded whole wheat rye flour, because here we love its typical unique complex flavor: malty, nutty, a little bit sour and fruity.

So the total formula is:

30% whole wheat rye flour
20% sourdough starter
75% 💦💦
2,5% salt

I thought about using my sourdough starter for this recipe for a long time.

I was out for a couple of weeks trip, so I stored my sourdough with the method of crumbling and drying it out in flour.

When I came back I had to revive my sourdough crumbling: it took three days to have it in perfect shape but as there was plenty of activity, I finally could use it.

This brioche bread, recipe by @pan_brioche, is simply gorgeous.
You can garnish it with salty or sweet food.

My favorite?
Butter and strawberry jam or honey for breakfast, hummus for snack or even lunch 😉😋🍯

I love to let my imagination run free while working with brioche dough.
Sourdough brioche is malleable enough to play with different shapes and fillings.

This time I choose fresh pineapple 🍍 and the result was amazing.
Some lemon zest and vanilla gave the right touch, in a perfect match of flavors.

In order to be able to work the dough creating all the different shapes, I always mix the dough the day before and let it in the refrigerator till the morning after.

These ones are hand kneaded 💪🏻💪🏻

Here are the ingredients you need:

500 gr strong white flour
200 gr milk
100 gr sourdough starter
1 egg
1 egg yolk
70 gr sugar
50 gr room temperature butter
1 coffee spoon of salt
Organic lemon zest

Eggwash + a coffee spoon of water to brush before baking.

Follow the usual method to mix the dough, make folds and let it rest.
Bake in preheated fan oven at 180 degrees, for about 20 minutes till golden brown.

Enjoy! 🥐🥐🥐😋

You can always use your sourdough discard, after you refreshed your starter.
I usually make simple recipes or I just fry it, mixing with some spice or fresh herbs.

Here is an option: sourdough rye grissini sticks. A treat you can give yourself any day of the week 😉

Perfect as a snack, gorgeous with some hummus, some good salami, or cheese..... right for the Italian “aperitivo”.

My 80% sourdough rye flour bread. 😍

A distinctive, flavoursome loaf.

You eat it for its flavour.

You either love it or you hate it.

No fluffy, airy result using such a high percentage of rye flour, but that’s not the point.

So just take out butter from the refrigerator, let it get to room temperature and we’ll talk later 😎🙌🏻

I use high quality stone-ground organic flours, by @elamasadero
The 20% left is a strong stone-ground organic bread flour.
